4 Tbsp Real butter - very soft
4 cups peeled and chopped tart apples (granny smith etc)
1 loaf Cinnamon vanilla raisin bread (1lb 10oz aprox)
1/2 cup granulated Cane sugar
1/2 cup dark brown sugar


9 large eggs (fresh)
2 12oz cans evaporated milk (reduce liquid slightly for firmer pudding)
1/2 cup dark brown sugar
4 tsp 100% pure vanilla extract


4 Tbsp melted butter
1/2 cup dark brown sugar


Vanilla ice cream

Cooking Instructions

Preheat oven to 325 degrees.

In a bowl, combine cubed apples and soft butter, stirring gently to coat. Add 1/2 cup of each sugars and stir gently. Grease bottom and side of large glass baking dish (13x9) with butter. Use spatula to scrape apples into baking dish and spread out evenly. Add bread cubes to apples and gently toss to incorporate evenly.

In separate bowl, whisk eggs, milk, vanilla, and 1/2 cup of each sugars. Pour mixture over bread and apple combination and toss lightly to coat. Do not over-mix to break apart bread. Liquid should cover bread and apples when slightly pressed down. Bake right away at 325 for about 40 minutes.

Remove bread pudding from oven and brush top with melted butter and sprinkle with brown sugar. Return to oven for about 10 minutes to brown. Remove bread pudding from ove and let cool for 10 minutes before serving warm with vanilla ice cream.
