6 lbs Carnitas Meat (large pieces Boneless Pork Shoulder)
The Veneta Rub Company – Mama Bear’s Rub and All-Purpose Seasoning
Garlic Powder
Onion Powder
Ground Pepper Medley
Real 100% Orange Juice with Pulp
Real 100% Apple Juice
Extra Virgin Olive Oil
Large Copper-Bottom pot or Heavy Skillet
Large Crock Pot with Lid
Large Baking Sheet with raised edges
Canola Oil

Cooking Instructions

Cube 6 lbs Boneless Pork Shoulder meat (usually labeled for Carnitas) into 1 ˝’ to 2” pieces. Toss liberally with The Veneta Rub Company’s - Mama Bear - Rub and All-Purpose Seasoning. Let meat rest for 30 – 60 minutes, covered in plastic wrap to prevent drying out. Heat heavy copper-bottom pot and then add several tablespoons Olive Oil to cover bottom. Brown cubed pork in the olive oil, stirring to coat all pieces in olive oil and so that none of the meat appears raw on outside surfaces. While browning, add Garlic and Onion powders and Ground Pepper Medley. Pour browned meat and any juices into large Crock Pot. Pour 2 cups each Orange and Apple Juices into pot/skillet to de-glaze and then pour liquid over meat in crock pot and cover with lid. Cook pork mixture on high in crock pot for 4 or 5 hours, stirring once per hour to assure even cooking.

Begin to Preheat Oven to 425 degrees. Prepare baking sheet by greasing generously with canola oil to prevent meat from sticking. Using slotted spoon, remove meat from crock pot, straining most of the juices, and ladle evenly onto greased baking sheet. Once meat has cooled off for about 10 minutes, use your fingers to work the pork into smaller pieces, or use two forks to pull it apart. The pork should separate easily into smaller pieces at this point as the connective tissues have all been broken down. Place tray of pulled pork in preheated oven and bake for about 20 minutes. (Check it half way through.)

Turn heat up to 450 degrees and brown/crisp the meat. Don’t leave it in too long to prevent drying out. Remove from oven and it is ready to serve over rice or use in tacos or burritos. Carnitas are great with rice, salsa, guacamole, cilantro, chopped onion and/or radish. Delicious!
