4 very ripe bananas OR 2 very ripe bananas AND 1 cup unsweetened Applesauce
1/3 cup melted real butter
2/3 cup white cane sugar (not beet sugar)
2/3 cup dark brown cane sugar
2 large eggs, beaten
1 1/2 tsp vanilla - 100% pure extract
1 1/2 tsp cinnamon
1/2 tsp allspice
1 tsp baking soda
1/2 tsp salt
1 3/4 cups all-purpose flour
1 cup chopped pecans
1 cup golden raisins

Cooking Instructions

Preheat oven to 350 degrees.

Prepare large size cake pan for baking by coating pan with shortening, then dusting with flour. Turn pan over and tap a few times to remove excess flour.

In a glass bowl, mash bananas with a fork and stir in applesauce. Stir in melted butter, sugars, eggs, and vanilla. Sift together flour, cinnamon, allspice, baking soda, and salt into separate bowl. Fold dry ingredients into banana mixture. Fold in pecans and golden raisins.

Scrape batter into prepared, large cake pan to fill about 3/4 full. Sprinkle with a little sugar on top if a crust is desired.

Bake for about 1 hour or until bread passes toothpick done test. When you can insert a plain toothpick in the middle of the cake and it comes out dry, your cake passes.

Cool 10-15 minutes (or more) before slicing.
